AUTUMN VEGETABLE PUMPKIN
You can find pumpkin everywhere right now. It is a typical autumn vegetable and looks great as more than just Halloween decor. Thanks to its nutritional diversity, it is also perfectly suited as an ingredient for healthy dishes. Among other things, it provides potassium, magnesium, and zinc. Hokkaido is particularly well-suited for this recipe as it does not need to be peeled.
Attention: Do not use ornamental gourds! They contain toxins!
Pumpkins grown from your own seeds over generations can also develop these toxins. For safety, it is best to use products from the supermarket (ideally organic quality).
SATISFYING SWEET POTATO
The pumpkin is combined with sweet potato. It is not without reason that both ingredients are an important part of our VEGDOG GREEN CRUNCH dry food: it causes the blood sugar level to rise more slowly than regular potatoes. Furthermore, it is filling due to its high fiber content and contains many vitamins.
PROTEIN SOURCE KIDNEY BEAN
Of course, a protein supplier is indispensable! We chose to use kidney beans because they have a suitable amino acid profile and are very popular thanks to their savory taste. As a bean puree, in combination with our VEGDOG ALL-IN VELUXE mineral powder and our VISH OIL, they form the third component of the recipe.
IRON SOURCE SPINACH
The recipe is rounded off by spinach. It is not only a valuable source of iron, but also provides biotin, folic acid, beta-carotene, and vitamin K. And not to forget: it tastes very good!
PREPARATION INSTRUCTIONS
If using canned kidney beans: 100g dry beans correspond to 200g canned. Some manufacturers do not use sugar to preserve canned beans. Ideally, use such a product. If you cannot find any, the small amounts of sugar will not cause any problems for your four-legged friend.
For dried kidney beans: Soak them overnight according to package instructions and then cook them for a sufficient amount of time.
For frozen spinach: Place the frozen spinach in the refrigerator overnight to thaw. Here you need about half of the specified amount of fresh spinach.
Take a few pieces of the sweet potato aside after cooking and use them at the end as a chunky addition to the finished recipe.
Have herbs, such as parsley, ready in small quantities for garnish at the end.
PREPARATION
- Wash the Hokkaido and the sweet potato if necessary. Cut both into equal-sized cubes and cook them in a pot with a little water until they are easily pierced with a fork (about 10 min).
- Let everything cool down until it is at most lukewarm.
- Puree the soft kidney beans in a blender until a nice paste has formed (you might need a sip of water). Then add the pumpkin, sweet potato, and the cooking water, along with the prepared spinach (thawed or steamed, fresh), and continue to blend until a mixture forms. Feel free to stop early so that a few chunks remain.
- Now add our Vish Oil and All-In Veluxe (available together in our Cook-it-yourself Box) and mix well. If desired, garnish with the previously set-aside sweet potato pieces and a little parsley. Done!
